Vegan Recipe: The "Holy Shit!" Miso Chickpea Salad
How it all happened..... when I was looking in the fridge for the ingredients to make chickpea salad, the miso was right next to the veganaise. Perfect! It just felt natural to add some miso to the mix. After it was all said and done I gave it a taste. All I could say was, "holy shit!" So here it is... the "Holy Shit!" Miso Chickpea Salad recipe.
Chickpeas - Onion - Celery - Carrot - Old Bay - Miso - Veganaise
~ 29 oz canned chickpeas (1 large can)
~ 3 tablespoons diced red onion
~ 3 tablespoons diced celery
~ 3 tablespoons diced carrot
~ 1 teaspoon old bay seasoning
~ 3 tablespoons white miso paste
~ 1/2 cup veganaise
~ Drain and rinse chickpeas
~ Partly mash the chickpeas with a fork (leaving some whole)
~ Mix in diced vegetables and old bay seasoning
~ Blend miso paste in with the veganaise (mixture will not be smooth).
~ Stir the miso/veganaise mixture into the chickpeas and vegetables.
~ Serve as a sandwich, on crackers, or just eat it like it is.
