Potatoes - Onions - Garlic - Mushrooms - Vegetable Broth - Rosemary - Thyme

Vegan Recipe: Mashed Potatoes with Mushroom Gravy

Ingredients (mashed potatoes)

~ 5 pounds potatoes
~ 1 cup raw cashews
~ 1/2 cup Earth Balance
~ 2 teaspoons Nature’s Seasons
~ 1/4 cup cashew milk

Instructions

~ soak raw cashews in hot water for an hour
~ make a cashew cream by combining soaked cashews with 1/2 cup of water in a high powered blender
~ peel and cut potatoes
~ cook until tender
~ drain and transfer to large mixing bowl
~ with an electric mixer, whip the potatoes, cashew cream, Earth Balance, Nature’s Seasons and cashew milk
~ serve with tons of mushroom gravy on top

 

Vegan Recipe: Mashed Potatoes with Mushroom Gravy

Ingredients (gravy)

~ 1 pound mushrooms
~ 2 onions
~ 6 cloves garlic
~ 1/2 teaspoon dried rosemary
~ 1/2 teaspoon dries thyme
~ 2 teaspoons Nature’s Seasons
~ 4 tablespoons olive oil
~ 3 tablespoons flour
~ 4 cups vegetable broth

Instructions

~ chop the mushrooms, onions and garlic
~ sauté in olive oil until caramelized
~ add rosemary, thyme, Nature’s Seasons and flour
~ continue to cook for 1 to 2 minutes
~ pour in vegetable broth and bring to a boil
~ reduce heat and simmer until thick and bubbly
~ serve over mashed potatoes or you can just drink it
