Yes We Can... Have Pancakes and Sausage!
Just because I am a vegan does not mean that I am missing out. Pancakes do not need eggs to be light and fluffy and Field Roast makes amazing breakfast sausages out of vegetables and grains. I found the pancake recipe on AllRecipes.com and I discovered the most amazing maple syrup company called Runamok Maple. My favorites are the cardamom infused maple syrup and the bourbon barrel aged maple syrup. Don't forget the coffee.
~ 1 1/4 cups flour
~ 2 tablespoons sugar
~ 2 teaspoons baking powder
~ 1/2 teaspoon salt
~ 1 1/4 cups water
~ 1 tablespoon canola oil
~ in a large mixing bowl combine dry ingredients and blend
~ whisk in the water and canola oil just until blended (there will be small lumps)
~ heat skillet with oil or nonstick spray
~ pour on the batter and cook until golden brown
~ serve with vegan sausages, Earth Balance, and maple syrup
