Vegan Recipe: Chocolate Cherry Cake

This is a perfect cake to make for Valentine’s Day because cherries and chocolate are so romantic together, but any day of the year is a good day for romance if you ask me. The recipe for the cake portion came from the Minimalist Baker website. I did not use the icing recipe that came along with it. Instead, I made a tart type of cake so I could fill the top of it with vegan whipped cream and liquored up cherries. If you don’t have a tart pan you could use a regular 9 inch round cake pan. I chose to make cupcakes with the extra cake batter that I had and I froze them to have as a treat later. You can also use the extra cake batter to make two cakes. It’s always nice to share. 

Vegan Recipe: Chocolate Chery Cake

Ingredients

~ 1 1/2 cups nut milk
~ 2 teaspoons apple cider vinegar
~ 1 1/4 cups unsweetened applesauce
~ 1/2 cup strong  brewed coffee
~ 2/3 cup melted cocoanut oil
~ 2 teaspoons vanilla extract
~ 2 cups flour
~ 1 1/3 cups sugar
~ 1 cup unsweetened cocoa powder
~ 2 teaspoons baking soda
~ 1 teaspoon baking powder
~ 1/4 teaspoon salt
~ 1 container (9 ounces) CoCo Whip or vegan whipped cream
~ 1 (21 ounces) can cherry pie filling
~ 1/4 to 1/2 cup kirsch or cherry liquor
~ grated dark chocolate to sprinkle on top

Instructions

~ Preheat oven to 350 degrees
~ Spray two 9 inch pans with nonstick baking spray (or use one 9 inch pan and a muffin pan)
~ In a large mixing bowl add the vinegar to the nut milk and let sit a few minutes while you measure out the other ingredients
~ In the same bowl combine the applesauce, oil, coffee and vanilla
~ Once the wet ingredients are blended add the flour, sugar, cocoa, baking soda, baking powder and salt
~ Beat with an electric mixer until the batter is smooth
~ Bake for 25 to 30 minutes
~ Remove the cake from the pan and cool completely
~ Once the cake is cooled, drizzle about 2 tablespoons of cherry liquor on the cake
~ Mix 1/4 to 1/2 cup of the cherry liquor into the cherry pie filling
~ Top the cake with vegan whipped cream, cherry pie filling and grated dark chocolate
