Vegan Recipe: Vodka Cream Sauce

Vodka cream sauce is pink so that makes it a perfect thing to make for Valentine’s Day, which is exactly what I did. But I must say, I will be making this dish often because it was so delicious. I found this recipe on the Connoisseurus Veg website. I just added a few more ingredients to it to make it more to my liking. Those things were nutritional yeast, red pepper flakes chili oil. If you don’t care for the taste to be as spicy, just stick to the original recipe. 

Vegan Recipe: Vodka Cream Sauce

Ingredients

~ 1 cup raw cashews soaked 4 to 8 hours and drained
~ 1 cup water
~ 2 tablespoons olive oil
~ 1 large onion diced
~ 5 cloves of garlic (I used 9 cloves)
~ 1 can (28 ounces) crushed tomatoes
~ 1 can (28 ounces) diced tomatoes
~ 1 cup vodka
~ 1/2 teaspoon salt plus ore to taste
~ Black pepper to taste
~ Fresh basil

*Note - I also added 1/2 cup nutritional yeast, red pepper flakes, chili oil and 1/2 bag of frozen peas.

Instructions

~ Place cashews and water in a high powered blender and blend until smooth and creamy
~ Heat oil in a large pot and sauté the onion and garlic until soft
~ Add the tomatoes and vodka and cook for about 15 minutes
~ Add the cashew cream, salt, pepper, nutritional yeast, chili oil, peas and basil
~ Cook until hot and bubbly
~ Serve over ziti or any other pasta of choice
