Jackfruit Tacos with Avocado Slaw and Black Beans (Plant Based)

This is a plant based recipe that serves four. It makes a very large meal so make sure you are super hungry when you make this. Jackfruit is an interesting kind of produce that shreds like pork or chicken. When the jackfruit is young and green it is almost tasteless. As it ripens it gets sticky and sweet, so make sure you get the green variety. Canned jackfruit in water is so much easier to prepare than purchasing a whole jackfruit from the grocery store. Besides, a whole jackfruit can weigh up to 80 pounds and they are hard to find. You can get the canned jackfruit at an asian grocer or Whole Foods Market. Jackfruit adds the meat consistency to the tacos but it is not the star of this dish. What makes this dish special is all of the extras that are served with it. There is such a variety of colors and flavors in this recipe which make it super fun to eat and look at. 

Jackfruit Tacos with Avocado Slaw and Black Beans

Ingredients (slaw)

~ 2 cups slaw mix (shredded cabbage and carrots)
~ 1 avocado
~ Juice of 1/2 lime
~ 1/4 cup apple cider vinegar
~ 1/4 teaspoon salt
~ 3/4 teaspoon chipotle
~ 1 tablespoon agave

Ingredients (black beans)

~ 3 cups of black beans drained and rinsed
~ 3/4 cup water
~ 3 teaspoons mole seasoning (use 1 teaspoon cumin, 1/2 teaspoon chili powder, 1/4 teaspoon cocoa powder, and 1/4 teaspoon salt if you do not have mole seasoning)

Ingredients (taco)

~ Nonstick cooking spray
~ 1 cup shredded jackfruit
~ 1/2 teaspoon cumin
~ 1/2 teaspoon chili powder
~ Juice from 1/2 lime
~ 1/4 teaspoon salt

~ 2 cups colorful peppers
~ 2 cups onion
~ Pinch of salt
~ 4 six inch flour or corn tortillas
~ 1 cup salsa (homemade or jarred) * NOTE - I will be posting a recipe for homemade salsa sometime soon.


~ Blend avocado, lime juice, apple cider vinegar, chipotle, agave and salt in a high powered blender. If the dressing is too thick add a little bit of water.
~ Mix the dressing into the slaw mix and set aside.
~ In a small pot add water and mole seasonings to the black beans.
~ Mash the beans partly and let simmer on low heat until thickened.
~ Spray a small frying pan with nonstick cooking spray and sauté the jackfruit with cumin, chili powder, lime juice and salt.
~ Spray a large skillet with nonstick cooking spray and sauté the peppers and onions with a pinch of salt.
~ Assemble tacos any way you wish and top with 1/4 cup of salsa.
